Start w/ 1,000 in chips and start at $5/$15 double evry 20-30 minutes.

I run a game in a restaurant that in 3 weeks has gone from 16 to 30 players. first two weeks we put it to a vote on rebuys and noone objected to unlimited for 1st hour.
