Default Favorite Restaurants on the Strip

So, I'm trying to round out my regular restaurants to eat at while staying in Vegas. For a steakhouse I've settled on Del Monico's at the Venetian, and for Italian I really like Maggiano's. What are your favorite:

Chinese
Mexican
Sushi
Seafood
Other

I usually stay at the Wynn, so anything within walking distance from there gets bonus points.

I don't each much on the strip, but if you ever have a car here go to Viva Mercado's on Flamingo and Jones. It's so good it's almost worth it to take a taxi there.

Dude.........Maggiano's!? You can do better than that. Try Bartolatta in the Wynn. That's one of the best italian restaurants around. Maggiano's is just a yuppie chain with foul pre-frozen overcooked oversauced kraft macaroni with ragu. Yeesh.

Steak: Delmonico's is OK, but Craftsteak at MGM is a lot better. Try the double-bone aged ribeye for 2...unreal.

Sushi: Okada at Wynn and Nobu at Hard Rock (Nobu's especially nice because of the eye-candy)

French bistro: Bouchon at Venetian

Spanish/French: Picasso at Bellagio

FYP.. not much reason to eat elsewhere, unless you are visiting the Bellagio. The restaurants at the Wynn are amazingly good. I am surprised it hasn't been mentioned yet because all the other amazing places have, make sure you eat the DB Bistro burger at DB Bistro in the Wynn.. its the most expensive burger you will ever have, its unlike anything else you have ever seen (short ribs in the center of the sirloin!) or eaten before.
