If non-experiments and/or economics counts, you could do an exposition of game theory and bluffing.

Another idea would be to hook up some friends to skin conductance monitors and measure their stress levels in various situations of a poker game.

Science project? Are you in 8th grade or something?

You could always go for the baking soda and vinegar volcano, that was always a hit at the science fair.

Do a study on the psychological effect of making a lame post and then getting flamed.

Test to see if online poker is random or not.

Collect data (I'm sure some people would be willing to donate their databases) test the card distribution against what they "should" be.

Maybe not involved enough for a full blown project, but it's a start. You could do research on how the random number generators work (entropy pools, etc) to flesh it out a little.

Maybe you'll crack the code and become a bazillionaire...

My personal favorite was "The effect of water on plants" This one was a real winner.

If this topic interests the OP, Jim Easton posted data from 230K hands here.

One year %50 of the class did the "does a plant grow better listening to rock, opera, classical, or no music at all" test. Go with that one. The judges have seen all there is to know about it so it's tough to let them down.
Maybe go with a probability project and use odds calculators.
