How many kill tables at each level? Just one?

I wonder how that would affect the potential players. Do the LAGs go for the kill games while the rocks and fish play the regular games? What is the advantage of a kill game? I have only played 1/2 kill a couple of times in Vegas and Tahoe, so my experience is way too limited to have formed any sort of expert opinion.
