Dinner Last night: Oven Fried Chicken
Tuesdays are my night to cook. Decided on some chicken drumsticks, oven fried. Problem was, I didn't have enough breadcrumbs to do the job.
Didn't have any crackers or corn flakes either, and toasting/crushing bread is an absolute last resort. So I searched the interweb and learned that Parmesan cheese can be used, 1 part cheese to 2 parts breadcrumbs. It was fantastic. I highly recommend trying this. Really seemed to bring out the flavor of the spices I used. |

What exactly is "oven fried" chicken? Sounds like you made roast chicken.

Oven fried, as opposed to deep fried or pan fried.
Basically, give bottom of a baking pan a light coating of oil. 375 for 20 minutes, turn, 375 for 20-30 minutes more. Chicken comes out nice and crispy (not as crispy as deep fried, but much less fatty), and the meat falls off the bone. |
