Donkey as in an ass. Just another way of saying a bad player I believe.

As far as I can tell, the meaning is still evolving. As well as short hand for ass, i've also seen it used to describe bets and calls. 'I donk bet' has been used for 'auto-bet', ie, I raised pf with AKs, got one caller and donk bet the flop. 'Donk call' usually seems to imply a loose call by an opponent. But more importantly, so many people are using it that don't really know what it means that it seems to be picking up new meanings all the time.

It can be a verb.

i.e. "Getting drunk and donking around in the 2/4 game"
