For Vegeterian (Vegan actually), I agree with Turnipmonster, Hangawi is amazing. Best place I know of.

Ethiopian restaurants are great for Vegeterian. Upper East Side, The Ethiopian Restaurant is great and has a catchy name. West Side and Downtown Meskerem and Meskerem II are great.

I also eat a lof of Thai vegeterian food, but haven't found any great Thai restaurants in NY.

If you aren't going out to dinner early, getting into Red Bamboo could be impossible.
One warning- Hangawi is way more expensive than every other vegetarian restaurant on the planet.

I called them for reservations and they don't take reservations for the same day on weekends.

I work close by so I'm going to go there now and see if I can slip them a $20 to get on the list.

I see they're also open for lunch on the weekends so that's another possiblity.

As a former New Yorker I would have to say the best Thai food place I went to was in Brooklyn, right on Sheepshead Bay. They re-developed that area a few years back and opened an excellent Thai place along the strip (somewhere after El Greco diner). Check it out if you have a chance, you won't be disappointed!

(Note, while I'm sure they have vegetarian dishes - this is not a vegetarian establishment).
