So i presume in a horse turny, u play all 5 ?

Yes, and you rotate thru them in that order.

How often does this rotation take place? I'd imagine things would get wacky if it was every hand. Do they use blinds, or just antes?

I’ve only played in the one on Full Tilt and there, the level changes every 10 minutes. When the level changes, the game changes.

If IRC, they use blinds for Holdem and Omaha/8 and antes for the rest of the games.
