I believe UNLV (go figure) offers "Gambling Management" as a major, although I'm sure it deals with the business side of things, but there might be a few classes on gambling theory as well.

Many universities offer "personal development" or "recreation" classes in swimming, fencing, billards, and so on, for credit (1 elective credit, pass/fail grading, counts toward total credits but not your GPA or to fulfill any distribution requirement)... I have taught such a course for bridge though my local college campus.

There may be more resistance to poker "because it is gambling," but I am sure many of these places would still do it. Usually it happens when someone in the community approaches the appropriate department and asks if they will let him teach.

Answer to my own question.....

Sklansky's Fundamental Theorem of Poker:

Every time you play a hand differently from the way you would have played it if you could see all your opponents' cards, they gain; and every time you play your hand the same way you would have played it if you could see all their cards, they lose. Conversely, every time opponents play their hands differently from the way they would have if they could see all your cards, you gain; and every time they play their hands the same way they would have played if they could see all your cards, you lose.
