Is there a explanation why? I was explaining starting hands to my wife and told her what I've heard a million times over -- "27o is the worst starting hand in hold'em", but I've never heard the exact reason why. She wanted a better explanation... so here I am.

Lowest 2 cards you can have which can't make a straight or a flush using both cards.

Plus, there's probably the added bonus that 2's have no chance of being top pair, and 7's only have a small chance of being top pair, and even if it is, you have a terrible kicker.

...hence the "lowest two cards" part.
