Chances of hitting pairs
Odds of having aces is 1 in 111 hands. So any pair would have the same odds... 1 in 111. After 111 hands should you in theory have seen every possible pair once? (ie 22 33 44 ... ) ?

Your odds are incorrect. The odds of being dealt A-A preflop in hold'em are 220 to 1 (against) or 0.45%. The odds of being dealt any pocket pair (including aces) are 16 to 1 (against) or 5.88%.

I believe it to be closer to 208 hands, but in theory, yes.
