Any probability textbook.
~The Theory of Poker~ also deals with EV thoroughly. Which of these is a good answer to your question depends on the sense in which you mean "thorough." |

EV stands for expected value.
Weighing the Odds in Hold'em Poker included a small chapter devoted to EV. It's a very good book. You can probably find a good definition here on the forums if you try a search or two. |

I just ordered Theory of Poker, King Yao's book, and HOH 2 (already read 1). Thanks for the help guys.
