this setup sound good?

I'm in the market for a new computer and thinking about a desktop this time around since I will still have my laptop if i need to go wireless in class or something.

Dimension E510
3 GHz
1 GB RAM
80 GB HD
2001FP
128 MB Video

With another 2001 FP (~1750 total) would this setup be able to handle 8 tabling easily? I'm doing it now with only 512 MB RAM and a weird screen situation.

Would anyone recommend that I go laptop instead? And of the video cards with two outputs, which brand would you guys recommend?
