Default Steak Fat

Steak does not taste good if there is no fat. To hell with the health fanatics. Ideally, I like the fat to be well-done but the meat medium (pink in color). Yum yum.

Agreed. I've discovered that every butcher outside of the state of Texas has no idea about trimming a brisket either. They all cut all the fat off.

Call me a woman, but the chunks of fat is the main reason I'm not a big fan of steak.

Hmmm that may have been what went wrong, when I tried my hand at it. I had it smoking for 7 or 8 hours, but it was still tough....

There's a new device called a knife. I recommend picking one up for yourself.
