what are good ROI and ITM stats that i should go for when playing 20+2 10 seater sngs on UB. Also how many tourneys do i need recorded to have a good sized sample.

I'd say you should be looking for a 85% ROI and at least 70% ITM. Althought the FAQ might say otherwise, so check it out.
