Default Table Selection?

I've seen quite a few posters on here mention table selection. I know in Limit you can sit there and watch the game for however long you want to. However, in SNGs, the table is locked once it fills. How do you employ table selection in SNGs?

you join after the first few do and do things like choosing an optimal seat and not joining some where you recognize good players

figure out who shoves a lot and dont sit to their left. figure out who folds their bb a lot and sit to their right. holla

You can choose your seat? How? Is this only on Party Poker or on Pokerstars? I play on Stars and don't see the choose seat option. of course I might be blind.
