Game theory

I was reading the section on game theory in TOP a couple of nights ago and was just wondering if it can be applied to hold'em where your opponent can see your hand, also, is there any method to handling these complex calculations in the heat of play. I agev it to my ststistics professor to look at as he was interested, but I'd like to hear any feedback from you guys.
