Default Close EV question

Lets assume one hand I have Pocket tens and someone else has AK. The pocket tens are a slight favorite but this is only over the course of thousands of hands. Given no factors such as pot size/pot odds, the tens would have a higher EV over time than the AK. My question is during the course of 1 hand, does EV and percentages that are very slight (nearly 1:1) even matter?

of course. at even money, i'd take the tens in a second, but wouldnt even think about taking the AK.
