i think the cause of death in her case would be a heart attack (the initial injury) and the mechanism of death would be dehydration.

cause/mechanism/manner of death work as follows:

cause: initial injury (gunshot wound)
mechanism: physiologic change (exsanguination)
manner: circumstances (homicide)
