Assuming I don't totally donk it up postflop (which I don't, unless I'm on a 2+2 table), how many of those huge pots do I have to win to make up for the times I call down & lose to a better 2 pair/full house?

And sy_or_bust is right. You need to specify whether the blinds are structured as 1/2 or 1/3, as it affects your odds. You probably are assuming 1/2 though.
