Most are average if not sub par, and most of the big name restaurateurs who have places in Vegas are actually licenses run by the casinos. Its always close, often very good, but never as good as the real thing. Back to the topic, think 1950's martini lounge. White jacket bartenders (mixologists) with bow ties catering to the mid-tier who think they are the high end consumer. Add a decent tap pas menu and impeccable oak/leather banquettes and you might have a good formula. If you need management, steal from the best in NYC & LA. One day a week....we'll say Friday. 6 o'clock comes around and it's 25 cent pints. Someone goes to the bathroom, it's 50 cents. Another person goes to the bathroom, 75 cents, and so on until they're back to regular price.
