Here is the payout schedule I have been using:

5 or 6 players - 70/30
7 to 10 players - 50/30/20
11 to 14 players - 40/30/20/10
15 to 18 players - 40/25/15/10/10

up to 6 players - 70/30
7 to 12 players - 50/30/20
13 to 18 players - 40/30/20/10
over 18 players - 40/25/20/10/5

Here is my over researched payout structure:
5 or less - discussed (usually winner take all with 4 and 2nd gets money back with 5)
6-9 players: 67%/33%
10 players: 60%/30%/10%
11-15 players: 56.5%/28%/15.5%
16-20 players: 51%/25%/14%/10%
