Default variance in sports/life

of the four major pro sports, which have the highest levels of variance. I think in Moneyball, i read that experts figured a team of rookies/league minimum vets would beat the yankees about 20% of the time. from highest to lowest level of variance, i think i'd rate them
Baseball
Hockey
Basketball
Football
Also, in bar games IE pool, ping pong, darts how do you rate the variance in these?

can't find those top notch responses in other forums. plus i meant to apply variance to random life situations, but i lost my train of thought. And i just got a new paddle, it's on. though i won't be around those parts 'till around christmas
