Default cast iron skillet

I just got a cast iron skillet, what should I make for dinner? suggestions that contain meat are appreciated by future generations of ootiots searching the archives, but I'd like some veggie suggestions. go crazy.

If you could get sufficiently high quality tuna, I think some lightly seared tuna (with a nice pepper crust or something like that) on one of those would be excellent. I guess the large mass of the skillet means it holds its heat well enough to really do things like that well.

I saw a very simple recipe the other day on a cooking show on PBS. Peel and chop up some potatoes, heat up a small amount of olive oil (butter was probably used too, I left it out when I made this), throw in potatoes. When they are about three quarters of the way done, peel and throw in several cloves of garlic and stir them around. Throw some sage on near the end and mix it around. Quite good.

yes it came "preseasoned" but I seasoned it a little today just in case. should be ready to go!

Iron skillets are MADE for cornbread.

The seared tuna is a good idea, too.

Get the skillet up to high-medium heat, then turn the heat down (since it will retain the heat, and if you keep it high you'll get LOTS of smoke).

Put the tuna on for about 30-45 seconds per side, slice thinly and serve. Check allrecipes.com for some good sesame rubs and dipping sauces.
