Default Probability/odds of specific flop

How would one figure the probability of flopping a specific flop given hand:

me: QQ
opponent: AK
flop: QQK

What is the proper combination formula to figure out what the probability was to flop quads and my opponent to hit one of his over cards?

There are 6 possible combinations, QQ and one of 3 kings or 3 aces. There are 48*47*46/6 possible flops= 17296 and when divided by 6 that makes about 1/2883 flops.

What about this

what is the probability of in a 7-handed game, any card on the flop being a 6,7,8 only on the flop

For at least one 6, 7 or 8 being on the flop (so 8-8-8 counts and 6-7-8 counts):

1 - C(40,3)/C(52,3) = 49.59%

Without knowledge of any cards, the number of players is irrelevant.
