I've never played live.

In that context, to be precise, 20 chips. But it's rarely meant that precisely.
The next question is, what value chips? And that's entirely dependent on the game. Generally a stack would be 5-10 big bets. |

And usually there are 5 stacks in a rack. A rack is 100 of whatever chip is commonly used in the game being described.
