I prefer the fish to have a big stack. I want big implied odds when playing my pairs (set value) and SCs. big fish + big stack = bigger mistake

I agree and I go after the big stacks as well. Just because they have a big stack doesn't mean they're a good player. Maybe they just got lucky right before you opened that table. If they are a fish they will eventually piss away their stack anyways and you will figure this out after sitting at the table for a few rounds. If they are a decent player you can always leave if you don't want to play big stack poker with him. And when you do hit a strong hand do you want to double your stack and get a full 100bbs or only get 50bb? Don't tell me you've never seen a fish with 4-5x buy in stack walk away empty handed.
