Default Most universally friendly tournament structure?

Hi,
I want to write up a guide for tournament organisers who use my website. Because a lot of tournament organisers would not know the ins and outs of structuring a tournament, I thought it would be good to conduct some kind of charter that they could go by. What do you think is the best tournament structure, in relation to both freezeout and rebuy? Tournaments would typically be one night events (approx 6 hours), with maybe 100-200 people, and if there were rebuys, they would last 90 minutes or so.
