Based on your blind scheduele, starting chips and expected number of players, your game would genearlly end at the next level after 20/40 (40/80?). That would put you in the 2:00 - 2:20 minutes range (not including breaks). If you want the game to end closer to 2 hours, you should remove the 15/30 level and definitely add in a 40/80 level and even a level after that just in case.
