Default Best Tournament Structure for a home game

I've hosted/attended numerous home games with all different types stuctures. I'm looking for some advice and thoughts on what would be a good structure for a regular home game I am going to be hosting.

These are the only stipulations I have as of now: NL Holdem multi table torney. No Rebuys. Usually around 15-25 people (3 table max). Max time available about 5 hours.

These are the details I am looking for:

Starting Chips

Blind structure (amount & time)

When to Color Up/Race

Any breaks between blind levels

Any other thoughts or comments would be greatly appreciated.
