The first one that came to mind was Castlevania: Symphony of the Night, though I haven't played it in a while.

Mega Man II also thoroughly rocked.

I haven't played Morrowind in years, but the music still gets in my head sometimes.

I'd like to specify that the music in the context of the game is an important aspect of it. A song can suck on its own and be great in a game (Crazy Taxi comes to mind).
