Apple has a 30 inch LCD that does 8-tables for $3k. You also need a special graphics card.

I currently 6 table on one monitor. I make my taskbar go away at 1600x1200 (use my mouse and alt-tab). I sit in two seats a tthe tops of tables, two seats at the bottom, and try to get two seats on sides. If I put the top ones as high as they'll go (putting the titlebar above the screen) and put the bottom ones as low as I can but still see the choice buttons, then put the last two in the middle, I can make it so I can always see if I have cards regardless of which windows are on top.

Good luck.
