Any movie without at least one gunfight of some sort probably needs to be reconsidered. Not that it is a must... but the chances are that if there isn't one it shouldn't be considered a western.

Some newer ones:

Tombstone (I'm sure someone said this one already...)

I liked this movie despite my intense dislike for Costner. And the gunfight at the end was very good.

and while it's not a movie and it's more of a cable TV series, I think Deadwood is hands down one of the best pieces of work I've seen on the subject.

I almost included this because of the main part of he movie, but the love story was so awkward and so forced in that I had to remove it from my list.
