Default 76 sooted flops bottom straight and meets aggression on paired board

No reads on players involved in the hand. Table is good, mix of loose and tight passive. Did I miss bets here? Am I scared of monsters under the bed? Or did I save bets for when I'm behind? And is the PF call ok?

PF call is ok, probably bad against a tight, position-aware raiser. Check calling the river is fine. This looks like an overplayed big pair or a boat with 99 or TT.
You can't really raise, but folding I think would be a mistake. You played it well, IMO.

Why not checkraise the flop?

Preflop, the call is fine you are getting 7 to 1 here.
After the flop I would go for check-raise and build the pot. I don't think betting out acomplishes anything, unless you were sure UTG will raise. Turn is tough. My first reaction is 3-bet but it's probably better to just call, especially if UTG is coming for the ride too. I would call the river too, the threat of 3-bet is too high to raise there.

I'm 3-betting this turn 100% of the time and check calling the river if it's capped. I think it's way more likely that MP1 tripped up the 8 he's holding as opposed to QJ, J8 or a boat.
