everything:

steak or chicken or ground beef
jalapenos
refried beans
salsa
guac
sour cream
tomatoes
onions
black olives are ok, but usually they straight bomb the nachos with them. Moderation is key.

A giant beer to wash it down with. Sounds good, might be dinner.

EDIT: and cheese. Preferably shredded pepper jack, nacho cheese, and shredded cheddar. YUM

Cheddar and Pepper Jack Cheese (lots of it)
Chicken (preferably heavily seasoned)
Fresh Guacamole
Sour cream
Pico de Gallo
FRESH jalepenos (the pickled kind can be substituted, but the fresh ones are SO much better- and hotter)

Optional-
Black olives
frijoles refritos
traditional salsa

Goddamn it- now I am hungry.

Sometimes I like it without meat, with meat I choose steak, hands down.

-cheddar jack (what is this cheese sauce you speak of?)
-little bit of refried beans
-jalepenos
-pico de gallo
-little extra cilantro
-guac
-sour cream (if I wanna get really fat)

I'm making nachos for dinner tonight, actually. I am putting refried beans, seasoned ground beef, white onions, black olives, and jalapenos on them, with some salsa con queso cheese sauce that was on sale when I went to the store last night.

Yeah, I pretty much prefer a plate of melted cheese with a few chips in there to provide some structure.
