Well ... if the true count is large and your going to leave soon and not come back for a long time, I'd spread to two hands with your max bet, get payed off and then run to the cage and cash out before you're told you can't play anymore.
Seriously, the advantage gained my playing two hands is so marginal that when weighed against the suspicion that you are counting cards and the harassment you'll get from players wanting to play its not worth it. It will however lower your variance. Poker is so much easier!
