Default Virtual Derby

They offer this sportsbook and I have a question about it.

They offer odds on different horses to win, you bet, the race is run, you lose/win yada yada yada. Are the race results predetermined? If they are, I don't see how they could offer such a game. If the results are already known, how can they put odds on different horses and have a longshot win?

Just something I was thinking about... anybody have any answers?
