MACARONI AND CHEESE
INGREDIENTS: * 2 cups uncooked elbow macaroni * 4 tablespoons (1/2 stick) butter * 2 1/2 cups shredded Cheddar cheese, divided * 2 large eggs * 1/2 cup milk * paprika, for the top PREPARATION: Preheat the oven to 350°F. Grease an 8-inch square baking pan. Cook macaroni in boiling salted water, following package directions. Drain well; return to pot. Add butter and stir until melted. Add 2 cups of the shredded cheese. In a medium bowl, whisk eggs with the milk. Add the milk mixture to the macaroni. Stir until well combined. Spoon into the greased pan. Sprinkle the remaining 1/2 cup cheese on top. Sprinkle with paprika. Bake, uncovered, for 30 minutes or until the cheese has melted and browned and casserole is cooked through. Serves 4 to 6. __________________ I have made this many times and everone loves it. If you need more just double the recipe. |

Somebody made a post in the BBQ Pulled Pork thread re: a grilled sourdough bread brushed with buffalo sauce, spices, and melted mozzarella, and it sounded pretty darned good.

BBQ sides I enjoy.
Coleslaw (is that too typical, either way, it's my perfect BBQ side dish). Kimchee (or however you spell it) goes great with BBQ, but I'm guessing it will scare people who aren't familiar. You might try flipping a next level Mac and Cheese thing, use some different cheese, make it a little more creative? Frankly- this isn't an area when I'm prone to get too creative. BBQ is such a celebration of the meat that there's no point in going nutty with the side dishes. |

OK here it is again
Buffalo Mozzarella: Slice some Sourdough Baguettes, hit them with a half spoon of buffalo wing sauce then a piece of fresh mozzarella. Season them with Creole, parsley, basil, pepper and kosher salt and toss them on the grill using indirect heat until the bread is nice and toasty and the mozzarella just starts to break into a melt. |

Another non-traditional (for BBQ's anyway) but always hit item:
1 pkg. (6 oz.) Smoked or Maple Ham 1/2 cup Light Cream Cheese Spread 4 Kosher Dill Pickle Spears SPREAD ham evenly with cream cheese spread, using about 1 Tbsp. of the cream cheese spread on each ham slice. CUT each pickle spear in half lengthwise. Place 1 pickle piece on each ham slice; roll up. Cover and refrigerate at least 1 hour or until ready to serve. CUT each roll-up crosswise into 4 pieces. |
