Default Sweetbreads

Does anyone know what they taste like? I have the opportunity to eat some tonight (roasted, with mustard sauce) but don't know whether to stray from my trusted and true seared venison.....

Sweatbreads (brains) are pretty good. I have never had them in a mustard sauce (don't particularly like that). But please post a trip report once you have.

I've never had them, so I can't comment on the taste, but I'm pretty sure they're not brains. I think they're generally the pancreas.

The only time I ever had them (fancy continental restaurant) they were too rich/fatty tasting and the texture was offputting. I wouldn't get them again.

Sweetbreads are not brains, and that definition in your link is half right, i have never seen them from the stomach only the thymus gland of a calf before it suckles. They have no taste and the texture is very hard to explain sort of like a titty in your mouth very soft and smooth , they melt in your mouth.
