Dropping tables might improve your clicking skills or even decrease the time it takes your eyes to read the HUD and make your decision. But in terms of learning the what's and why's of the game - do it away from the table.

Right, but after I've done all of this book learning, putting it into practice isn't as easy as 1-2-3. I'm just feeling skeptical right now that my decisions are optimally +EV when I have 10 seconds to make my decisions.

Well just keep plugging away and remember that you're never going to make the right decision every time. Mistakes are part of the game - and sometimes they work out pretty sweet!
