i feel like i should fold, but i don't with AA

as played, i think you have to call the river. even if you lose over 50% of the time, you should win more than 25% of the time.

I would probably fold to the turn min-raise. If you play, push turn instead of just call the min-raise.

I hate these spots against unknowns, if you have QQ or the opponent is tight they are pretty foldable but if you have AA and its against unknown/looseys it isn't so clear, sometimes you will stack off and think "god i am dumb" and sometimes thing will show you some stupid crap like JJ.

Pot the flop. On the turn raise I don't believe calling is an option considering pot/stack sizes. there is no way you're getting away on the river so push the turn. Be a bettor not a caller.

You have basically no chance to improve, and it looks like villain is pushing river. if you think you are beat and can't call river bet then why call miniraise on turn?

I think folding to the raise is the better option. I try to follow TAFKAn's Rule of Thumb which says treat all players as if they are a pussy. They will only make this play with the nuts, until you see them do otherwise.
