Later on though, he was talking about how he likes to change up his play so that people can't catch on to his betting patterns. I think that this specific hand just happens to be part of the approx. 20% that he would just call. (I don't know if that number is exactly what he says in the book, but close enough)

He didn't use that hand as instruction on how to play AK, just as an example of what a hand thought process looks like.
