I probably don't take this deal because I feel like I have more HU experience than Sheets.

Pretty sure you can buy in directly to the foxwoods event he's talking about for 10k. After taxes I've been told the prize is worth 7200 (if you take the cash, FW takes out 2800 right away, nevermind any other taxes you might have to pay yourself like income tax?). So you're really only losing 2800, AND since he's just giving it to you, I guess you could probably get away from calling it income.

I'd take the cash, if it's not a significant part of your BR, buy in to the event directly. This is a no brainer for me. I think I'd be tempted to offer to take the deal from Sheets, and then say something like "lets play for 3k" to the winner. That way you're still chopping, but also you don't have to conceed.

Yep. Your EV in this situation isn't so hot, even if you're better than him, it's not going to be by a lot, so if you are even better than himn, maybe you're worth 6000?

Yep, I would take the deal against you, since you and most others on this forum are in a higher league than I . . . for now :-)
