Here's a resource for comparing buffets. I can't vouch for the ratings, though.
Las Vegas Advisor buffet list

The Bellagio buffet is the best and it really isnt close.

If you dont wanna spend $$ go downtown and eat a meal at that Golden Gate place(exact name?) its like 4-6 bucks for a huge burger tons of fries and a drink......

But if you are gonna buffet it splurge and just go to the Bellagio hungry...youll leave enthralled by the wonderment of gluttony unbridled....

Seriously I consumed at least 4000 calories when I went.
Im a large man...
I was hungry....
And it was damn good.

or you could always go to the bellagio buffet at 10:15, pay for the breakfast buffet, and wait about 20 minutes before starting to eat. Somehow the lunch buffet will magically appear and you only paid half price for it.

Bellagio was so good I needed my stomach pumped afterward -- and I'm vegetarian so like half the stuff was out anyway. I don't know the official requirements for a comp, but I just asked the dude for one and he wrote it without even looking up or asking how long I'd been there. After the comp, the brunch (=full breakfast + full lunch) was like $5.
