I used to know how this works. It's the same deal if you stare at a green image and then look at white paper, you'll see green. (Could be off on the colors).

Trying to remember...is this the opponent process theory? Forgot all my basic Psych stuff.

I think the coolest optical illusion I have seen is the dragon illusion. Click on the link on the page to watch the video. It's crazy.
