3-man (with an international variation called FROG)

Drunken Candyland: Take the top card. Whoever's color it matches drinks. Orange is social (everyone drinks) purple is pick-a-victim. If you advance with one of the character cards, drink in proportion to how far forward you move. If you move back with a character card, pick a victim to drink in proportion to how far you moved back. Whoever is in last place when someone wins, pays the penalty (shots or 'favors' depending on the company you keep).

Mexican: Roll two dice under a cup. peek at the dice and announce the roll (bluffing allowed), largest die first (3-4 would be Forty Three) next player must roll a higher number, or call bullsh*t. anyone caught bluffing drinks. Anyone not rolling higher drinks. If you roll 1-2, shout "Mexican", show the dice and everyone drinks.

The best one I was ever in just developed--just a bunch of guys watching a Bulls-Jazz NBA Finals game. Started out with one guy drinking whenever MJ scored, and another guy drinking when Malone scored. Everybody claimed something (mine was a Rodman rebound) and joined in. We needed to accelerate it, so replays meant drink again. (MJ scores, drink, replay, drink again.) It still wasn't quite right, so we added a group rule: whenever a white guy scores, everybody drinks. Of course in the next ten minutes Hornacek, Stockton, Kukoc, and even Luc Longley are all going off and everyone ends up smashed by the end of the game!
