Default HORSE, HOSE etc...

How exactly is this played? I know dealer gets choice between hold'em omaha and some other games. What are the other games and how does betting go? Is betting just like LHE or NLHE?

You play each game for one full rotation of the table, or for a fixed time period (usually 30 minutes), and then switch to the next game in the order. The dealer doesn't get to choose the game. HORSE and HOSE are always played with limit betting. You use the standard betting structure - if you are playing 10-20 HORSE, the holdem and Omaha round use blinds of 5 and 10, while the razz, stud, and stud-8 rounds use a 1 ante and a 3 bring-in. The flop games use betting rounds of 10-10-20-20, and the stud-type games use 10-10-20-20-20.

H = Holdem
O = Omaha-8
R = Razz
S = Stud
E = Eight or better stud (Stud-8)

There's also H2O, with H=holdem, 2=2-7 triple draw lowball, and O=Omaha-8.
