Not as popular as some others, but Kattan's Antonio Banderas ("I am so the sexy.") always cracked me up as well.

If an impersonation counts as a character, I'd nominate Eddie Murphy as Stevie Wonder. I still sing "Ebony and Ivory" that he did with Joe Piscopo as Sinatra:
