You should almost always play whatever game is allowed that has the lowest house advantage. You can check that easily by going to wizardofodds.com. When you're starting out, you'll be playing BJ and video poker exclusively. After you finish the easier sites (and it takes a while), you'll start playing pai gow and even slots and keno.

I say almost always because sometimes you'll want to trade EV for lower variance. Some sites have video poker with a 0.4% HA, and blackjack with a 0.5% HA. VP has much bigger swings, so I sometimes choose BJ.

That's true, but even taking that into account, you'll lose less playing blackjack. The HA on pai gow is about 2.3%.
