Alright here's my guess.

So everyone who's seen maverick knows they played poker on riverboats. So when someone drew a full house, and said "full house" someone said "it's not a house, its a boat, dumbass" or whatever epithet they used back then.

Then the next time they got it, they said "boat"

Boo yah
